
Tahini is honestly hands down one of my favourite items to have in the pantry, well actually tahini, nut butters and nutritional yeast, I couldn’t be without. Tahini is so great for making quick and easy salad dressings. My favourite creamy brand is hands down belazu tahini. Tahini is made using sesame seeds which provide good levels of magnesium, iron and fiber. This dressing with apple cider vinegar is good for gut health and digestion.
Sun-dried tomato and tahini salad

Ingredients
- 130 g Lentils, drained
- 70 g Sundried tomatoes
- 80 g Artichoke, drained
- 225 g Spinach
- 1/2 Cucumber chopped
- 2 tbsp Tahini
- 2 tsp Apple cider vinegar
- 1 tsp Tamari
- 1 tsp Honey
Instructions
- Prepare the vegetables and place them in a large bowl
- Mix together the dressing ingredients (tahini, vinegar, tamari & honey)
- Season with salt and pepper, and drizzle over the salad
- Mix well, divide onto two plates and serve
